Surprising Tuna Salad

Ingredients

1/4 cup
wasabi mayonnaise (or regular mayonnaise)
1 tbsp lemon juice
2 tsp pickle juice
1 tbsp maple syrup
1 can (185g)
Sealord Tuna Chunky Style in Spring Water, well drained
1/2 cup Corn kernels
1/4 cup finely chopped green apple
1/4 cup finely diced gherkins
1/4 cup finely diced red onion
1/4 cup frozen peas
2 Tbsp crispy fried onions (optional)

 

Directions

Step 1 of 2

Place mayonnaise, lemon juice, pickle juice and maple syrup in a medium-sized bowl.  Stir to combine.

Step 2 of 2

Add Sealord tuna chunky style in spring water, corn, apple, gherkins, onion and peas. Mix well and season with salt and pepper to taste. Top with crispy onions just before serving.

Foodie Tip
Serve on a bed of chopped lettuce with corn chips on the side (try jalapeño-flavoured). Also great with toasted sourdough or crackers! Regular mayonnaise works well in this recipe if you don’t enjoy the flavour of wasabi. Alternatively, try half and half, or use regular mayonnaise and add a small amount of wasabi paste. This tuna salad mix keeps well in the fridge for 2 days - the flavour is even better after 24 hours. Add the crispy onions just before serving.
