Prime skinned and boned fillets of Orange Roughy. Pearly white flesh, of medium texture, and delicate shellfish-like flavour. Orange Roughy can be served with a wide range of sauces and seasonings and is ideal for restaurants, function caterers and retail fish bars. These attributes and the flexibility of presentation make Orange Roughy one of the world’s most sought-after white fish.


Sealord Orange Roughy is a deep water species caught at depths of 700 to 1,000 metres (2,000 to 3,600 feet). They average between 30-40cm (12-16 inches) in length and have an average weight of about 1.4kg (3lb). Orange Roughy are caught year round by deep water trawling.


All New Zealand fish are sustainable as our fisheries are strictly controlled by the Quota Management System. This system is recognised as one of the most effective in the world. Sealord fishes for Orange Roughy quota determined by the QMS which revised each year. One of the main Orange Roughy fisheries was closed in 2000 due to a reduction in stocks resulting in recovery of these stocks and the reopening of the fishery.

Cooking Guide

Suitable for most methods of cooking. These natural fillets can be breaded then deep fried, oven baked, pan fried, sautéed or grilled/broiled.

Keep frozen at or below -18ºC (0ºF).
