1x 350g Sealord Simply Natural Orange Roughy Fillets (defrosted)
4 cups of mesculn leaves
4 oranges, peeled and segmented
½ red onion
2 tbsp freshly chopped mint
½ cup diced cucumber
4 tbsp olive oil
salt & pepper
rice bran oil
Mix together diced red onion, mint, cucumber, olive oil & salt & pepper (to taste) to make a salsa.
Place defrosted Orange Roughy fillets on a paper towel to absorb any excess moisture. Heat some rice bran oil in a fry pan over a medium heat.
Panfry on both sides until cooked.
Place on a plate with mesculn leaves, orange segments and salsa.
