Tuna Zoodle Carbonara

Ingredients

  • 185g

    Sealord Tuna Sensations Olive Oil (drained)

  • 4

    courgettes

  • 1 tbsp

    olive oil

  • 1

    small onion, finely diced

  • 4

    cloves garlic, crushed

  • 3

    eggs

  • 1/2 cup

    grated parmesan

  • 1/4 cup

    chopped parsley

  • 2 tbsp

    chopped dill

  • 1 cup

    rocket

  • 1 cup

    thawed peas

  • salt and pepper

Directions

  1. If you don’t have a zoodle maker, use the flat side of your grater to get long strips of the courgettes then cut the lengths into thin strips. Set aside.
  2. Whisk the eggs lightly in a bowl. Add the tuna, parmesan, parsley, dill, rocket, salt and pepper.
  3. In a frying pan melt the butter, add the onion and garlic cooking for 3 minutes until softened.
  4. Add the courgettes and peas, tossing gently for 2 minutes to heat through. Remove from the heat and stir through the egg mixture.
  5. Serve immediately with an extra sprinkle of shaved parmesan and chopped parsley.
