Tuna and Zucchini Lasagne

Our Tuna and Zucchini Lasagne is a great way to change up an old favourite, and get more fish and vegetables in your diet.

Ingredients

  • 2

    185g Sealord Tuna in Spring Water (drained)

  • 4

    large zucchini, sliced thinly lengthways

  • 1 tbsp

    olive oil

  • 1

    onion, chopped finely

  • 2

    cloves garlic, crushed

  • 420g tin

    chopped Italian tomatoes

  • 1 tsp

    balsamic vinegar

  • 1 tsp

    dried oregano

  • 1 cup

    basil leaves (reserve a few leaves to garnish)

  • 250g

    light cottage cheese

  • 1 cup

    grated mozzarella

  • 2 cups

    salad leaves

  • 1 tbsp

    French dressing

Directions

  1. Heat a grill pan to a medium heat. Cook the zucchini for 2 minutes each side until soft and lightly browned. Remove and cool.
  2. In a medium sized pot, heat the oil. Add the onion and garlic cooking for 2 minutes to soften. Add the tomatoes, vinegar and oregano bringing to a simmer for 5 minutes until the sauce is thickened. Season with salt and pepper to taste.
  3. In a bowl combine the basil, tuna, cottage cheese, and half the mozzarella, stirring well.
  4. Preheat an oven to 180C.
  5. To assemble the lasagne, place a third of the sauce in an ovenproof dish. Top with a layer of zucchini, then tuna mix. Repeat the layers finishing with zucchini. Sprinkle over the remaining mozzarella. Place into the oven to bake for 25 minutes until golden and bubbling.
  6. Serve with mixed salad leaves and a drizzle of dressing.
