Smoked Fish Pie with Rosti Topping

Ingredients

    450g Sealord canned Smoked Fish Fillets, drained

  • 2

    medium sized potatoes, peeled

  • 2

    medium size kumara, peeled

  • 2 tbsp

    olive oil

  • 1 cup

    frozen peas

  • broccolini, or other green vegetable to serve

  • Sauce
  • 3 tbsp

    butter

  • 1

    leek, finely sliced

  • 3 tbsp

    plain flour, sifted

  • 1 1/2 cup

    milk

Directions

  1. Preheat oven to 180°C
  2. Put the potatoes and kumara in a saucepan and cover with water. Bring to the boil and boil for 2 minutes, then drain and cool slightly. Grate into a bowl and toss with the olive oil and salt and pepper to taste
  3. In a saucepan, melt butter over a medium heat, then add the leek and cook for 5 minutes. Blend in flour and cook for 3 minutes, stirring constantly
  4. Slowly add in milk until the sauce thickens and season to taste
  5. Stir in Smoked Fish Fillets and peas and place mixture in an ovenproof dish. Top with potato and kumara. Bake for 30-35 minutes
