Ingredients

  • 2 fillets per person

    Classic Crumb Hoki Fillets

  • 1

    orange kumara

  • 2

    carrot

  • 2

    parnsip

  • 2

    small beetroot

  • 1

    large zucchini

  • rice bran oil spray

  • salt and pepper

Directions

  1. Preheat the oven to 190 degrees celsius fan bake
  2. Use a mandolin or thinly slice each vegetable with a knife. Once cut, lay each slice down on paper towel, and sprinkle lightly with salt. Leave to sit for 10-15 minutes to draw out the moisture, pat dry, and lay onto baking trays.
  3. Spray with rice bran oil, then bake in the oven for 20-25 minutes or until golden and crispy, along with your fish. Season with pepper if desired, then serve.
