Fish Tacos with Corn Salsa

Ingredients

  • 1 pack

    Sealord Classic Crumb Bites

  • 1 cup

    canned or frozen corn kernels

  • 2

    tomatoes, finely chopped

  • 1/2

    small red onion, finely chopped

  • 2 tbsp

    coriander, finely chopped

  • juice of 1

    lime

  • 1 tbsp

    olive oil

  • 2 cups

    shredded cabbage

  • 8

    small soft tortillas, warmed

  • chilli sauce to serve

Directions

  1. Heat the oven to 200C
  2. Place the Hoki Bites on an oven tray and cook for 14 minutes, turning once
  3. While they cook, prepare the corn. If using canned, drain well. If using frozen, boil in water for 2 minutes then cool under cold water and drain well
  4. Place the corn in a bowl and mix with the tomatoes, red onion, coriander, lime and olive oil and season with salt
  5. To serve, place some shredded cabbage on a warm tortilla, top with fish bites and salsa and add chilli sauce to taste
