Fish Tacos with Corn Salsa

Sealord Classic Crumb Bites
canned or frozen corn kernels
tomatoes, finely chopped
small red onion, finely chopped
coriander, finely chopped
juice of 1
small soft tortillas, warmed
chilli sauce to serve
- Heat the oven to 200C
- Place the Hoki Bites on an oven tray and cook for 14 minutes, turning once
- While they cook, prepare the corn. If using canned, drain well. If using frozen, boil in water for 2 minutes then cool under cold water and drain well
- Place the corn in a bowl and mix with the tomatoes, red onion, coriander, lime and olive oil and season with salt
- To serve, place some shredded cabbage on a warm tortilla, top with fish bites and salsa and add chilli sauce to taste
