Ingredients

  • 1 box

    Sealord Pale Ale Beer Batter Hoki Fillets

  • 300g

    Agria potatoes, skin on, cut into chips

  • 1

    lemon, cut into wedges to serve

  • 1 tbsp

    olive oil

  • Malt Vinegar and Tarragon Mayonnaise
  • 4 tbsp

    malt vinegar

  • 1 tsp

    tarragon dried

  • 5 tbsp

    mayonnaise light

  • Slaw
  • 6 cups

    shredded white cabbage

  • 2 cups

    shredded red cabbage

  • 2

    carrots, grated coarsely

  • 1 cup

    roughly chopped mixed herbs (dill, parsley, coriander etc.)

  • salt and pepper to season

  • Dressing
  • 1/2 cup

    olive oil

  • 4 tbsp

    white wine vinegar

  • 2 tbsp

    sweet chilli

Directions

  1. Preheat an oven to 180C.
  2. Onto a large baking tray place the potato chips. Coat lightly in olive oil and place into the oven for 25 minutes turning once until crispy and golden.
  3. Cook the fish as per packet instructions.
  4. To make the dressing in a jar place the oil, vinegar and sweet chilli, shaking well to combine.
  5. Place the cabbage, carrot & herbs into a large bowl. Toss through the dressing and season just before serving.
  6. Combine the mayonnaise ingredients into a small bowl, mix & serve.
  7. Serve the Hoki Pale Ale Beer Batter Fillets with potato chips, mayonnaise, salad & a lemon wedge.
