Sealord Hoki Fry
Sealord Hoki Fry is made from Hoki fillets, individually coated with fresh breadcrumbs, then snap-frozen to ensure freshness. Hoki is a white, flaky and succulent fish with a mild flavour and is certified as sustainable by the MSC (Marine Stewardship Council). The natural shape variation of Hoki fry, and the fresh, crisp crumb create an excellent plate presentation. Sealord Hoki Fry can be served with a wide range of sauces and seasonings, and is ideal for restaurants and function caterers.
Description
Our Hoki is filleted, then cut by hand into weight and size controlled portions. The portions are then coated with fresh breadcrumbs. Hoki Fry is not pre-fried. Sealord Hoki, related to hake, is also known as whiptail, blue hake, or blue grenadier. Sealord Hoki found in New Zealand waters averages 60-100cm (23-40 inches) in length and has an average weight of 1.5kg (3.3 lb). Hoki is caught by trawling in water 200-800 metres (650-2,600 feet) deep. Hoki is most abundant around the South Island of New Zealand. The species is fished year round, but the peak catching period is June to September.
Sustainability
All New Zealand fish are sustainable as our fisheries are strictly controlled by the Quota Management System. This system is recognised as one of the most effective in the world. Sealord Hoki is certified as sustainable by the MSC (Marine Stewardship Council).
Cooking Guide
For best results, pan or deep fry.
Deep fry: Preheat oil to 180ºC (360ºF), fry for 3-5 minutes or until golden brown. Drain well and serve.
Pan fry: Place Hoki Fry in a pan containing hot oil. Cook for 4 minutes on each side, or until golden brown.
Oven bake: Brush lightly with oil or melted butter. Place on tray. Bake in a preheated oven at 200ºC (400ºF) for 7-8 minutes on each side, or until golden brown.
Grill: Brush lightly with oil or melted butter. Grill under a preheated grill for approximately 4 minutes on each side, or until golden brown.
Do not refreeze. Once thawed, use immediately.

Hoki (Macruronus novaezelandiae)(43% minimum), wheat flour, water, rice flour, maize starch, soya flour, salt, glucose, yeast, vegetable oil, flavour enhancer (621), thickener (412), ascorbic acid (300), calcium sulphate (516), natural colour (160[b]).
