Tempura Battered Hoki Brioche Burger with Asian Slaw

Ingredients

    Sealord Hoki Tempura Batter fillets (or your favourite frozen fillets)

  • 4

    brioche buns

  • 1/3 cup

    coriander leaves

  • 1 teaspoon

    finely grated lime zest

  • 1

    lime, quartered (optional)

  • Slaw
  • 1

    handful shredded green cabbage

  • 1

    handful shredded red cabbage

  • 1

    medium sized carrot, grated

  • 1/2

    red onion, finely chopped

  • 1/4 cup

    roasted peanuts, roughly chopped

  • 1/2 teaspoon

    black sesame seeds

  • Dressing
  • 1 tablespoon

    oil

  • 1 teaspoon

    sesame oil

  • 1 tablespoon

    rice vinegar

  • 1 tablespoon

    soy sauce

  • 1 teaspoon

    sweet chilli sauce

  • ½ teaspoon

    honey

  • 1 clove

    garlic, crushed and chopped

Foodie Tip

Squeeze lime juice over the hoki fillet for extra zest.

Directions

  1. Heat the oven to 200°C.
  2. Place the Hoki Tempura Batter fillets on a baking tray and for 9 minutes each side.
  3. Toss the shredded cabbage, carrot, onion, peanuts and sesame seeds together in a bowl.
  4. Combine the dressing ingredients, drizzle over the salad and toss again.
  5. Halve the buns and lightly toast.
  6. Arrange the slaw on the base of each bun. Top with a Hoki fillet, sprinkle with coriander and lime zest. Cover with the bun lid and serve with a wedge of lime.
