Smoked Fish Mini Pies

Ingredients

  • 1x 310g

    Sealord Fish Fillets Smoked Flavour, drained

  • 200g

    puff pastry sheets

  • 5

    eggs

  • 1/2 cup

    cream

  • 100g

    grated cheddar cheese

  • 100g

    crumbled feta

  • 1 cup

    spinach

  • 2 tbsp

    chopped parsley

  • 2 tbsp

    chopped chives

  • salt & pepper

Serve with your favourite chutney.

Directions

  1. Preheat oven to 200°C.
  2. In a mixing bowl combine eggs, cream, Smoked Fish Fillets, grated cheddar, feta, spinach and herbs. Season well with salt and pepper.
  3. Cut the puff pastry sheets into 12 x 8cm rounds.
  4. Line a twelve 80ml (4 tbsp) capacity muffin pans with the pastry rounds.
  5. Spoon the smoked fish fillet mixture into the pastry cases.
  6. Bake in oven for 15 minutes, or until golden brown.
  7. Remove from oven and set aside in the pans for 5 minutes to cool.
