Flatbread with Hoki, Salsa & Hummus

These are so simple to make and packed full of flavour. Makes a perfect for a light lunch or a simple dinner.

Ingredients

  • 1 pack

    Sealord Potato Crumb Hoki fillets

  • 100g

    cherry tomatoes, cut in quarters

  • 1/4 cup

    gherkin, chopped

  • 1

    avocado, diced small

  • 1

    lime, zest and juice

  • 1/2 cup

    coriander, chopped

  • 1/4 tsp

    chilli flakes

  • salt and pepper

  • 2 cups

    spinach, shredded

  • 1 cup

    hummus

  • 1/2 cup

    Greek yoghurt

  • 4 large

    flatbreads

Directions

  1. Cook the Sealord Potato Crumb Hoki fillets as per packet instructions.
  2. To make the salsa, combine the cherry tomatoes, gherkin, avocado, lime zest and juice, coriander, chilli flakes, salt and pepper in a small bowl.
  3. To serve, spread a large dollop of hummus on the flatbreads and add spinach, tomato salsa and Sealord Potato Crumb Hoki fillets. Squeeze over extra lime juice and a dollop of yoghurt.
