Flatbread with Hoki, Salsa & Hummus
These are so simple to make and packed full of flavour. Makes a perfect for a light lunch or a simple dinner.
Sealord Potato Crumb Hoki fillets
cherry tomatoes, cut in quarters
avocado, diced small
lime, zest and juice
salt and pepper
- Cook the Sealord Potato Crumb Hoki fillets as per packet instructions.
- To make the salsa, combine the cherry tomatoes, gherkin, avocado, lime zest and juice, coriander, chilli flakes, salt and pepper in a small bowl.
- To serve, spread a large dollop of hummus on the flatbreads and add spinach, tomato salsa and Sealord Potato Crumb Hoki fillets. Squeeze over extra lime juice and a dollop of yoghurt.
Add 1/2 teaspoon of paprika to the Greek Yoghurt for a smokey hit.
