Asian Salmon in Baking Paper Parcels

1 x 260g box
Sealord salmon fillets
root ginger, peeled and finely grated
garlic cloves, peeled and finely grated
small red onion, finely diced
crushed dried chili flakes
fresh coriander, chopped
- Preheat oven to 200°C. Meanwhile lay the fillets on a piece of baking paper that will easily fit them and be able to make a parcel with.
- In a bowl stir together all ingredients until well combined. Distribute this mixture on top of salmon. Wrap the baking paper around the fish to form a packet and seal.
- Place in oven and cook for 10 -12 minutes.
- Remove fish from oven and unwrap. Serve rice and greens on the side, and a wedge of lime to squeeze over just before serving. Enjoy.
