Asian Salmon in Baking Paper Parcels

Ingredients

  • 1 x 260g box

    Sealord salmon fillets

  • baking paper

  • 2 inch

    root ginger, peeled and finely grated

  • 2

    garlic cloves, peeled and finely grated

  • 1

    small red onion, finely diced

  • 1/2 tsp

    crushed dried chili flakes

  • 1/2 cup

    fresh coriander, chopped

  • 1 tbsp

    vegetable oil

  • 1 tbsp

    sesame seeds

  • 1 tsp

    fish sauce

  • 1 tsp

    soy sauce

  • 2 tsp

    honey

  • 1

    lime, zest

Directions

  1. Preheat oven to 200°C. Meanwhile lay the fillets on a piece of baking paper that will easily fit them and be able to make a parcel with.
  2. In a bowl stir together all ingredients until well combined. Distribute this mixture on top of salmon. Wrap the baking paper around the fish to form a packet and seal.
  3. Place in oven and cook for 10 -12 minutes.
  4. Remove fish from oven and unwrap. Serve rice and greens on the side, and a wedge of lime to squeeze over just before serving. Enjoy.
